Andiamo is the Las Vegas Hilton’s entry into the arena of fine Italian dining in the valley. Guests anticipate an outstanding experience upon being greeted by the affable Matre d’ Pio Roberto Apicella. He sets the tone for the evening with a most gracious Italian/Continental flair. The service of the friendly wait staff is a reflection of his concern he gives each guest. Apicella is a rare breed of the Matre d’ of yesteryear.
This bright and airy restaurant creates a warm and comfortable ambiance with its light-toned modern Italian decor in shades of cream, beiges, tans, and white. These colors give a freshness to the sophisticated classic northern Italian cuisine to come. The kitchen is “exhibition-style” and allows you to watch the chefs in action as they prepare some of their finest Italian creations. Italians are known for their passion in art, music, fashion, and life. They are also passionate about their food–flavors, freshness, and quality of ingredients.
Andiamo’s kitchen staff is under the watchful eye of Hilton’s 15-year veteran chef Ray Sansotta. Flavorful appetizers include fried squid with a spicy sauce and eggplant filled with crabmeat, ricotta, fennel, and yellow peppers. These starters excite the palate and serve as wonderful openers. Entrees include delectable seafood specialties such as grilled salmon laced with vermouth, orange shallot butter sauce, and sweet basil, and broiled red snapper topped with roasted walnuts, portobello mushrooms, zucchini, and brown butter.
Pasta includes fettuccine, spaghettini, capellini, penne, and linguine. They come served with various sauces and ingredients sure to please the most discriminating palate. My favorite is the linguine Al Gamberi–black and white linguine with sautéed shrimp, oregano, virgin olive oil, roasted peppers, and kalamata olives.
Fresh vegetables and roasted red bliss potatoes accompany the following entrees: veal scaloppine al marsala, Pollo Vesuvio, and roasted rack of lamb. Tarragon sauce, pine nuts, fresh herbs, white wine, oregano, olive oil, and prosciutto ham are accents that enhance many of the dishes at Andiamo. Italian cuisine is a culinary specialty that is always in style, and Andiamo is an experience that should not be missed.
